Generally they are stored on C:\Program Files\Microsoft\Exchange Server\V15\Logging, and C:\Program Files\Microsoft\Exchange Server\V15\Mailbox ( Exchange 2016 version) Also if you have circular logging enabled in your mailbox database, you may get large size of files in your disk.
Based on your concern, I've checked my Exchange server in the lab, generally as far as I know we could have large size of different logging files in the server disk, and large size of mailbox databases if you have it before.
